(March) Madness Chili

No need to wait for playoffs of any sport to make this delicious version of chili. Easy and satisfying, it’s a winner every time.


  • 2 pints cooked beans (1 pound dry, soaked, and pre-cooked)
  • ¼ lb of bacon, cooked and coarsely chopped
  • 1 lb of ground beef, browned on a stove top
  • 2 T. onion powder
  • 1 t. Pepper
  • 1 T chili powder
  • 1 T ground cumin
  • 1 t. dried oregano
  • 1 small can tomato paste
  • 1-8 oz can tomato sauce
  • 6 cups beef stock

How to Cook:

Preheat solar oven while browning meats. Combine all in dark pan, put on lid, and place in oven for 4 hours. Serve as is, or topped with chopped fresh onions, sour cream, and shredded cheddar.

This is a great dish for gathering your family and friends. It stands on its own, or is the perfect center piece for a party buffet. If you’re planning a game day bash with lots of activities and games, just make this the main course and add in anything your heart desires….

  • Tortilla chips
  • Corn bread
  • Crusty Italian bread with butter (yes, I know – not traditional but oh so good!)
  • A big, crispy green salad

For a real treat, serve vanilla ice cream for dessert, drizzled with honey and sprinkled with cinnamon. The ice cream and vanilla  balance out that spiciness very nicely, and the cinnamon stays in keeping with the Tex-Mex flavors of the chili.
